Crush Pad Operations

From Grapes to Wine

Vinification or winemaking is a term used to describe the process of transforming grapes into wine. There are numerous variations in the way the grapes are processed. The variations are driven by the type of grapes (varietals) processed and wine produced, the sugar content of the grapes, product characteristics as specified by the winemaker, the lay-out of the winery, as well as conditions during the harvesting period. Although red and white wine production involves slightly different processes that necessitate separate production lines, the winemaking process is similar for both types. There are currently many variations on each stage in traditional winemaking, but the operations described in this book constitute the basic method for producing high quality wines. Figure 2.1 illustrates the winemaking process for red and white wines. Winemaking, although a science, is not an exact science when it comes to grape processing. Many winemakers are convinced that their methods and style are the best for the varietal of grapes they process.
